Tuna Bean Burgers

 INGREDIENTS: 

  • 2 cups canned or cooked tuna
  • 1 1/2 cup cooked white beans
  • 1 egg
  • 1/4 cup chopped chives or green onion
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce
  • 2 teaspoons minced garlic
  • 1 teaspoon minced fresh ginger
  • 1 teaspoon dry mustard
  • 1/3 cup sesame seeds
  • 1/3 cup panko or breadcrumbs Peanut or coconut oil for frying

 

Flake fish in large chunks. In a medium bowl, mash beans with a fork. Add egg,
chives, cilantro, lime juice, soy sauce, garlic, ginger and dry mustard to mashed beans, mixing until thoroughly combined. Fold in fish and refrigerate 20 minutes.

In a medium bowl, combine sesame seeds and panko or breadcrumbs. Form tuna
mixture into 4 patties. Coat patties on both sides with sesame seed/crumb mixture.

Heat oil in a skillet over medium-high heat. Fry 2-4 minutes per side until golden
brown. Serve immediately with dipping sauce or wasabi mixed with mayonnaise.

Recipe Alternative: Patties can be baked in a preheated 350° oven on a greased baking sheet 12 minutes or until lightly browned.
